Valentine's Day Marshmallow Peanut Butter Cups

Hey guys, it's almost Valentine's Day! I may be in the single ladies' corner, but I can still appreciate everything heart shaped and pink so long as it is in the form of chocolate. I made some delicious and relatively easy marshmallow peanut butter cups. I may not have tempered my chocolate correctly (oops!) but these still turned out pretty great.





I made my "marshmallow fluff" by making Italian meringue. You could just use store bought marshmallow fluff, although I would recommend whipping it up a little before using it. Definitely keep these cups refrigerated once they are all done.





Marshmallow Peanut Butter Cups

Ingredients
2 bags Ghirardelli's 60% cacao chocolate chips
1 cup peanut butter
1 tablespoon honey
75 grams egg whites (about two large)
202.5 grams of white sugar
49.5 grams water

1. Melt one bag chocolate chips and spread a spoonful of chocolate into the bottom of a silicone cupcake liner. Repeat until you have filled 24 cupcake liners. Let set at room temperature.
2. Meanwhile, mix peanut butter and honey until the peanut butter becomes a little lighter in color. When chocolate is set, pipe some peanut butter on the chocolate.
3. Heat water and white sugar over low heat. Begin to whisk egg whites to stiff peaks, do not over beat. Once sugar mixture has reached 118 degrees Celsius, pour into the egg whites in a slow, thin stream, while beating the egg whites. Once all the sugar mixture is in the egg whites, beat at full speed until egg whites cool to room temperature. At this point, you can add food coloring if you wish.
4. Pipe marshmallow fluff on top of peanut butter.
5. Melt second back of chocolate chips and pour one spoonful of chocolate over marshmallow fluff. Let set.
6. (optional) Pipe hearts on top in colored frosting.
